We start early morning (at 8:30) or in the afternoon (at 3pm) to visit a Parmigiano Reggiano cheese factory to see all production chain, the different rooms and the huge storage with inside 9.000 wheels!!! There is also a tasting of 3 different Parmigiano Reggiano aging After, we ride the bike in the countryside to see our crops and our nature! At the arrival I will offer you breakfast, and I will give you a lab coat and a cap for the access to the production area. I’ll bring you along a complete tour to discover all the steps of Parmigiano Reggiano’s production. We’ll see where the animals are bred and where the milk is mould. We’ll go into the cheese factory during milk processing and we'll witness in cooking and making cheese wheels. We’ll see then the process of salting and maturing up to enter the huge “caveau”, where thousands of cheeses wheels are guarded and laid out in long rows in the silent maturation rooms and where the scent of cheese will smell so nice and exciting that we won’t be able to resist till the final tasting of cheese and local typical products. The Lowlands of the Province of Parma consist in the plain north of Parma. It is a territory characterized by the respect for ancient traditions, rich in history, art and genuine food, to discover and enjoy at a slow pace. Our route to the discovery of the Parma Lowlands starts crossing the strip of land running from the Parma Morta Reserve to Maria Luigia’s Woods in Torricella, near the meandering of the Taro river, to reach Zibello and Polesine Parmense, places where it seems as if time has stood still. We will visit a farm devoted to the recovery of ancient local races, we will observe the farm animals, the vegetable gardens and the vineyards. We will see the masterpieces of the local culinary tradition, such as Culatello, Fiocco, Spalla di San Secondo, Salami, Strolghino, produced and refined in the magnificent cellars of an ancient fortress of the early XIV Century, perfectly restored and endowed with a fine restaurant, where it is possible to enjoy the best of Parma cuisine. Few people know that this is the area in the world where the greatest variety of cured meat products is obtained from pigs! During the visit you will be able to understand the features and origins of the different products and the characteristics and the history of the king of cured meat, the PDO Culatello of Zibello. After that you will visit the resting, salting and ageing rooms of Parmigiano-Reggiano cheese with their overwhelming aromas. We will reach an authentic Prosciutto di Parma Plant, crossing the Parma Hills region, where the rearing of pigs developed since ancient times, favored by the large woods and the presence of oak trees. We will stop on the way at the foot of the Castle of Torrechiara to take some pictures. During the visit to the plant we will be able to observe the production process of this delicacy and learn about its important history and all the standards which must be complied with, to fully understand the the origins of the unique character of Parma ham: the sweetness!
