Saltwater Oyster Depot

On a busy day, even though we’re a tiny little restaurant, we go through 1,500 oysters. I like to think that we’re serious, but not overly so—we want people to have fun. There’s this item on my menu called The Raw Deal, and it’s a dozen oysters and a glass of wine for $42. We also have baked oysters, and we change those seasonally. I have a wine list that has everything to do and say about oysters. One is a Sancerre. It has great minerality and acidity, it’s like kissing the ocean before you kiss the ocean. I also love our Muscadet. It’s really crisp, a lot lighter than Sancerre, but it’s bone dry.
